Mock chicken fajita salad! YUM







This is a raw recipe that I just came to in my kitchen this evening. :-) Its pretty tasty it's personal sized in my opinion because I turn it into a meal, with no real "dressing" or dairy involved you don't really have to worry about calories or fat!

Mock chicken fajita salad:
Ingredients:

1/2 green bell pepper rinsed and finely chopped
1/2 red bell pepper rinsed and finely chopped
3-4 green onions rinsed and chopped
4-5 mushrooms washed and chopped finely
a handfull of grape tomatoes
1/4 teaspoon chili powder
1/4 teaspoon oregano
1/4 teaspoon cumin
1/2 teaspoon pepper
And of course ROMAINE LETTUCE

Add all the ingredients and mix well into the salad. Things you can add to this are sunflower seeds, pine nuts, nuts of your choice, Red Wine Vinegar (which is what I use for dressing), and tons of other things! Follow your gut stay in tune with what your body is craving.
