French Lentil Rice Soup

ABSOLUTELY POSITIVELY DELICIOUS!


 MY changes to:  French Lentil Rice Soup

6 cups fat free reduced sodium chicken or vegetable broth
1 cup dried lentils, sorted, rinsed and drained
2 medium carrots, finely diced
1 small onion, finely chopped
2 medium stalks celery, finely diced
3 tablespoons uncooked white rice
2 tablespoons minced garlic
1 teaspoon herbes de Provence or dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup whipping cream or sour cream (optional)
1/4 cup chopped fresh parsley (optional)

1.) Combine broth, lentils, carrots, onion, celery, rice, garlic, herbes de Provence or thyme, salt and pepper in your slow cooker. Cover; cook on high for 4 hours. DELICIOUS!  

The recipe says to blend or puree everything together, I prefer the texture of the lentils so I leave it intact.  I made these with chewy soft bread sticks and a fresh olive garden inspired salad. Worked perfectly!
